Every Summer, I love to plant my own garden of vegetables and herbs. This year I am growing cilantro and if you’ve ever had cilantro in your garden, you know it grows abundantly! If cared for properly, it can grow year round depending on where you live (or if grown indoors).
I wanted to find fun ways to use it in a variety of recipes because cilantro adds wonderful flavor and is also a good source of antioxidants. I love a good pasta salad in the warmer months – They’re always so refreshing and easy to make ahead. There is nothing better after a busy day than being able to dig into a pre-made healthy pasta salad.
For this recipe I added my favorite Just Thrive Probiotic to the dressing. It’s the easiest recipe companion to ensure good gut health for my family. I open the capsule and sprinkle it into whatever we’re eating that day. Because this particular Probiotic is odorless and tasteless, my family doesn’t even know it’s in there! After adding Just Thrive Probiotic to our daily routine, we have more energy, better digestion and overall just FEEL better.
Some tips for this recipe- You can always stir in some cotija cheese for a nice salty addition. You may notice the pasta will absorb the dressing, so feel free to save some extra dressing to add when eating leftovers.

Probiotic Cilantro Lime Pasta Salad
Prep time: 15 minutes Cook time: 10 minutesTotal time: 30 minutes
LunchDiet: Vegetarian, Gluten Free (depending on pasta used)
Dressing Ingredients:
1 cup plain Greek yogurt
Juice from 2 limes
½ cup cilantro
4 garlic cloves
4 capsules of Just Thrive Probiotic
¼ tsp cayenne pepper
Salt and pepper to taste
Salad Ingredients:
1lb cooked gluten free pasta (I use bow tie)
2 cups of cooked corn
2 cups halved cherry tomatoes
1 diced onion
¼ cup cilantro
Directions:
Add all the dressing ingredients to your blender or food processor until smooth.
In a large bowl add your cooked pasta, corn, tomatoes, onion and cilantro.
Pour the dressing over the pasta and toss until coated. Save any leftover dressing to add on later.
Serve and enjoy OR refrigerate and enjoy for days
